Pectin, a naturally occurring substance is mainly procured from citrus foods, and used as gelling agent in jams and jellies. It works as a source of dietary fiber and used in sweets, medicines, desserts fillings, and as a stabilizing agent in milk drinks and fruit juices.
Pectin is completely safe and natural. It is extracted from apples with little amount of citric acid, however retaining the flavor intact. It helps in thickening, use less sugar and less cooking.
