Its main functionality is it is used as gelling and thickening agent. It is also used as food stabilizer. It is used to give jelly like consistency to marmalades or jams, which would be sweet juices otherwise. Pectin increases strength of gel in jams with low calorie and reduces synersis in jams.
High ester pectins are used in conventional jams and marmalades where it contains 60% above sugar and soluble fruit solids. Diet products can be made with low ester pectins.
It is used to offer a good flavor and clean bite. Pectin increases viscosity and stool volume to use it against constipation and diarrhoea. It is also used as a demulcent in throat lozenges. Pectin acts as a stabilizer in cosmetic products and can be used in healing preparation and specialty medical adhesives.
Pectin is considered as an excellent susbstitue for vegetable glue and many cigar smokers will use pectin for repairing damaged tobacco wrapper leaves on their cigar.
